brief explanation:
Our menu
changes and adapts throughout the year depending upon the seasons, the
freshness, and availability of the best quality ingredients we can get. This
gives us the opportunity to do a number of different things. (Yeah, we get
to play with our food…it’s kind of cool) We have a lot of things on the menu
that are not standard Texas fare, and still they come out really good.
Things like Aioli (ay-OH-lee) a strong flavored garlic mayonnaise. Polenta (poh-LEHN-ta)
an Italian dish made from coarse corn meal. It can be creamy or firm,
straight from the pot or fried on the grill. Brie (BREE) is an extra rich
soft cheese. Antipasto (ahn-tee PAHS-toh) is an assortment of marinated
vegetables.
A demi-glace
(DEHM-ee glahs) is a rich (and very tasty) sauce basically made by
reducing a stock with wine. Couscous (KOOS-koos) is a small round pasta that
can be flavored and used in a number of ways. If, for some reason, you’re
not sure what a certain ingredient is or how we use it…just ask.
